Chicken Recipe
4 boneless chicken breasts
1 orange, juice only
4 tbsp olive oil (2 tbsp grilling)
4 tbsp UH HUH ...
salt and pepper to taste
For grilling keep the chicken breasts whole and marinate with two tablespoons olive oil, UH HUH ... and orange juice.
For stir-fry and saute, slice the breasts into tenders, and marinate. In a hot pan with two tablespoons olive oil or on a hot grill, cook the chicken five minutes on the first side and three minutes on the second side. Before serving add salt and pepper. Serves four.
Omelette Recipe
3 fresh eggs (Check Date)
1 whole scallion chopped fine
1/4 red pepper finely chopped
1/2 cup grated cheddar cheese.
1 tbsp butter
1 tbsp UH HUH ...
salt and pepper to taste
chives for garnish
Beat the fresh eggs with a fork until they are blended. Melt butter in an omelette pan, then add eggs. After one minute turn the heat down and add the grated cheese, the UH HUH ... , scallion, red pepper, salt and pepper. When the cheese begins to melt, fold one half side on top of the other. Remove from pan. Cut in half and serve with chives on top. Serves two.
Egg Salad Recipe
6 hard boiled eggs
2 scallions, diced
1 celery stalk, diced
1 carrot, diced
1 tbsp UH HUH ...
salt and pepper to taste
2 tbsp mayonnaise
Chop eggs, put into a bowl with all the ingredients and mix until completely blended. Serve on toast or with lettuce. Substitute one can of tuna for hard boiled eggs for Uh Huh tuna salad. Serves four.
Herb Butter Recipe
1/4 pound (1 stick) of butter
2 tbsp UH HUH ...
salt and pepper to taste
Melt butter slowly then add UH HUH ... and salt and pepper. Put aside until it has cooled and begun to harden. With your fingers, roll into a loaf. Thoroughly wrap in plastic and put in the freezer. UH HUH ... butter is fantastic for corn on the cob, asparagus, popcorn, baked potato, artichoke and lobster dipping. Can be made several days in advance.
Steak Recipe
1 1/2 lbs sirloin steak
3 tbsp sesame oil
2 tbsp olive oil (frying option)
4 tbsp UH HUH ...
salt and pepper to taste
Score both sides of steak. Put sesame oil in a bowl followed by steak then sprinkle the steak generously with UH HUH ... , let sit for 30 minutes. In a hot frying pan with two tbsp of olive oil, or on a hot grill, place the steak UH HUH ... side down and cook for five minutes, flip and cook for three minutes on the sesame side. Let the meat rest for 10 minutes, sprinkle with salt and pepper slice at an angle and serve. Serves four.
Flounder, Scallops, Tuna and Swordfish Recipe
4 flounder fillets or the equivalent of the above seafood
1/2 cup white wine
1 tbsp UH HUH ...
2 tbsp Olive Oil
1 fresh lemon, cut into slices
Sprinkle the flounder on one side with UH HUH ... . In the pan, heat the olive oil, when the oil is hot put the fish UH HUH ... side down and cook for 1 minute. Flip the fish and add the wine. Cook for two minutes. Serve the fish Uh Huh side up with lemon slices. Serves four.
Vegetable Soup Recipe
6 cups chicken stock
1 onion, diced
1 red pepper, diced
2 garlic cloves, finely chopped
3/4 pound spinach leaves, chopped
3 carrots, sliced
2 stalks celery, chopped
1 medium sized potato, chopped
1/2 pound mushrooms cut in half
1 package frozen corn
2 tbsp UH HUH ...
salt and pepper to taste
2 tbsp olive oil
Heat olive oil and add all the vegetables except the spinach and corn. Cook seven minutes, stirring often. Add the stock. When stock begins to boil turn heat down to low. Add UH HUH ... , salt and pepper, and corn, cook for five minutes. Add the spinach. Cook until the spinach has wilted. To serve, use a slotted spoon and pile the vegetables in the center of a bowl, surround with broth. Serves four.
Delicious Dip Recipe
1/2 cup sour cream
1/3 cup yogurt
2 tbsp UH HUH ...
Mix the ingredients thoroughly. Use the dip for vegetables, chips, or as a dressing.
